Ingredients
  

For the Burrito Filling:

  • 4 large eggs
  • 1 cup cooked and diced ham or turkey sausage
  • 1 cup bell peppers diced (a mix of colors adds vibrancy)
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1 cup black beans drained and rinsed
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 4 large flour tortillas

For the Salsa:

  • 1 cup diced tomatoes
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Optional toppings:

  • Avocado slices
  • Sour cream
  • Hot sauce

Instructions
 

Prep the Ingredients:

  • In a bowl, whisk the eggs and season with salt and pepper.
  • Heat a skillet over medium heat and add a bit of oil. Sauté bell peppers, onions, and cherry tomatoes until softened.
  • Push the veggies to one side and pour the whisked eggs into the pan. Scramble the eggs until cooked through.
  • Add diced ham or turkey sausage and black beans to the skillet, stirring until everything is well combined.

Warm the Tortillas:

  • Heat the tortillas in a dry skillet or microwave until pliable.

Assemble the Burritos:

  • Lay out each tortilla and spoon the egg and veggie mixture onto the center.
  • Sprinkle shredded cheddar cheese over the filling.

Make the Salsa:

  • In a separate bowl, mix together diced tomatoes, red onion, cilantro, lime juice, salt, and pepper to make a refreshing salsa.

Roll and Serve:

  • Fold the sides of the tortilla in and roll it tightly into a burrito.
