Kale Feta Egg Toast

Kale Feta Egg Toast

kale feta egg toast is my fast and healthy version of eggs florentine. Sautéed kale and creamy feta served on toast with a fried egg.

Ingredients
  

  • 4 slices of whole grain bread
  • 4 large eggs
  • 2 cups fresh kale chopped
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • Salt and pepper to taste
  • Optional: Red pepper flakes for added heat

Instructions
 

Prep the Ingredients:

  • Preheat your oven to 375°F (190°C).
  • While the oven is preheating, wash and chop the kale, mince the garlic, and crumble the feta cheese.

Sauté the Kale:

  • In a skillet over medium heat, add 1 tablespoon of olive oil.
  • Sauté the minced garlic until fragrant.
  • Add the chopped kale to the skillet and cook until it wilts, about 3-5 minutes.
  • Season with salt and pepper to taste.

Toast the Bread:

  • Place the whole grain bread slices on a baking sheet.
  • Toast the bread in the preheated oven for 5-7 minutes or until it reaches your desired level of crispiness.

Cook the Eggs:

  • In the same skillet used for the kale, add the remaining olive oil.
  • Crack the eggs into the skillet, ensuring they don’t touch.
  • Cook the eggs to your liking; for a runny yolk, cook for about 2-3 minutes.

Assemble the Toasts:

  • Place a generous portion of sautéed kale on each slice of toasted bread.
  • Carefully transfer a cooked egg on top of the kale.
  • Sprinkle crumbled feta cheese over the eggs.

Optional Garnish:

  • For a bit of spice, sprinkle red pepper flakes on top.
